I am very honored to be included in Cooking Light’s story on why Portland reigns supreme as a food town. There were, however, a few errors I feel I should correct for you all. (I used to be a fact-checker in one of my former lives, hence my particular sensitivity to factual mistakes, especially when they apply to my personal business!) Corrections: 1) That was not a Red Wattle pig in the photo or at the class. It was a Duroc/Berkshire cross. 2) It was actually Gabriel Claycamp who taught the class that the writer visited, not I. 3) While I am the sole proprietor of the PMC, both Tray Satterfield and Adam Sappington really helped me start the PMC, not just Ms. Satterfield.
