Classes

More Classes to Come Shortly!

Please be patient. We’ve farmers and butchers and chefs to coordinate–all with different relationships to the sun going up and down! Meanwhile, if you’re not on our mailing list, please let us know if you would like to be on it by emailing info at pdxmeat dot com. Once you’re on the mailing list you’ll be the first to find out about our upcoming classes, and thus, one of the first to sign up before they sell out.

Please add me to your mailing list. I am very interested in the four part series and am disappointed that I didn’t find this site earlier.

  3. Gabrielle says:

I am also very interested in taking the rabbit butchery class. Originally I realized that knowing how to butcher game would be crucial to survival in the woods, which is a lifestyle I am very interested in undertaking when prepared to do so.

More recently I realized I wanted to dramatically decrease my meat intake and researched to find that rabbit is the most sustainable meat to even have, one of the reasons is that their food sources aren’t our own, no competition for resources.

What is the cost of a rabbit butchery class and how soon should we expect one to be offered?

    • Portland Meat Collective says:

The cost of our rabbit classes is typically around $100. Not sure when the next class will be. Likely in the spring at some point. We do only a few a year.

  4. Ray Hartlerode says:

Please add me to your mailing list. Along with the hog butchery class do you ever offer a class on hog slaughter. I am very comfortable slaughtering most animals, but would like to better understand the cleaning, scalding and scraping necessary on a hog to have skin-on hams and bacon etc. I do lots of curing and smoking. Thanks for helping to connect people with their food!
