Because some of my favorite mentors in the meat world will be there: Bob Dickson, who teaches classes with the PMC and who is high up at Dayton Natural Meats and Pacific Foods; Lauren Gwin, an agriculturalist at OSU with really smart ideas about how to change the system of meat production in America, Chris Roehm who raises amazing pork at his Square Peg Farm, as well as Tyler Jones from Afton Field Farm and Bill McKibben from McKibben Ranch. I think it will be an incredibly lively and informative discussion.
